Les madeleines

-2 eggs               -50 ml milk

-160 g butter    -25 g honey (a good tablespoon)

-100 g sugar      -165 g flour (white)

Melt the butter and add it over the honey. Mix it up.


In a bowl, mix the eggs, sugar and milk. Add the flour to the bowl where the eggs, sugar and milk are stored. Add the butter-honey mixture. Stir. Let stand in the fridge for 2 hours.

Pour three-quarters of the mixture into the moulds. Preheat the oven to 210 °C. Bake the madeleines for 3 minutes, then turn the oven tray and continue baking for another 3 minutes. Turn off the oven for 1 minute, then turn it back on at 210°C. Cook until the desired colour is obtained. Remove the madeleines from the oven and remove them from the mould. Wait 2 minutes and garnish with honey. Enjoy within 5 minutes for maximum pleasure.
